Now this is definitely a recipe to try!
I just made these the other day. I think this may be my 2nd or 3rd time and they are wonderful. I use the bread machine dough version and each time they have come out great.
The first time I made them, my daughter and I were amazed that there actually was a pocket! No need to ever buy pita bread again.
I’m thinking of maybe trying to add some garlic or parmesan cheese just to mix it up next time.
Something I would like to warn everyone about… The first time I made these, I used a cooling (baking) rack that I had placed on a cookie sheet. Not thinking much of it, I baked my pita. After a while I started to notice a strange smell. Well after taking out my 3rd set, I realized my rack had little rubber feet at the bottom. Didn’t even notice they were there before! Well that baking sheet and rack were goners! Not that anyone would do that except of course, ME! So I ended up having to make a trip to Sur la table for a new ones. Luckily for me they were having a sale!
I have recently read that you could also use a pizza stone to bake these on which I think I might try next time too.
