Taco Truck-Style Tacos
I just had share one of my family’s favorite recipes. They are so easy to make and so yummy!
I read this in the LA Times years ago in a section I think was called SOS. Anyone remember that? I couldn’t find my recipe a while back, so I decided to search the internet and lo & behold I was able to locate it and saved it to my Evernote. I didn’t realize the recipe was from 1999. Who would have thought it was THAT long ago? It’s an oldie but a goodie!
Anyhow, I made these the other day and I just have to say they are delish! I really don’t stray from the recipe as there is no need, but instead of using already cooked pork, I use an uncooked pork roast. The one I just made was about 3 lbs. and it cooks in the same amount of time as the recipe, 10 hours on low. I just adjust the amounts of the ingredients to the amount of pork I’m using. I usually put everything together in the crock pot the night before, prep some of the other items like the cilantro & onion and store everything in the refrigerator. When I get up in the morning I start my crock pot.
When I get home, the house smells wonderful and everything is all ready to go! I just take the pork out and shred, warm up some tortillas and then let everyone make their own. My family likes to add cheese, sour cream, avocado along with the onion & cilantro. Also, don’t forget some extra lemon or lime to squirt on top along with some Tapatio! Did I say yum? Oh yeah, I already did! Ha ha.
